When it comes to story most titles while connected to each other try to tell a standalone story. To get the big picture you'd need to play all of the titles.
Reading up on it or watching videos would probably spoil one thing or another. But I suggest you think twice about ORC. It's not canon and it's a bullet sponge simulator, arguably one of the worst RE titles. RE6 is an action coop game, while a fun one, doesn't exactly represent RE in terms of horror. RE7 is a classic RE title in first person.

I recommend playing them in terms of release date. Gaiden and reorc arent canon while survivor 2 and umbrella corps barely tell any story even though they are canon ( former is a main character's dream. ), it's not worth playing those along with gaiden and reorc. The ones that doesnt really require previous lore knowledge that much are re4 and re7 so if you want to, you can start from those 2 games instead of re1. Re4 also took a whole new level when increasing the action and changing the formula ( even though re2 is more actiony than re1, even kamiya agrees with this. ) so be aware. You could, but that would take away from the games you decide to do it with. Start with the 1 Remake on Steam, and then work up in release order. Um, yeah it plays differently from the others. But so do the others from the rest of themselves.
RE2 remake is modernized, IIRC RE3 is essentially a chase sequence, RE4 has motion controls on its most fun version (Wii, and next year: Switch), RE5 introduced multiplayer co-op, RE6 is a straight up third-person shooter (and if I remember correctly, doesn't it have cover mechanics?). RE7 is more like a spiritual successor to the others, and is entirely first-person.
Revelations 1 and 2 are superficially similar (and TBH the best version of Rev1 was the 3DS version, and the best part of that game period was it's raid mode IMO). As for what you're 'supposed' to know story-wise, I strongly disagree. I grew up only briefly playing these games, and have 'caught up' from January 2012 to last month when I couldn't finish Zero (I'm afraid that game might cause a power short in my XB1X, because it not only crashes the system but shuts it off too).
Not only did I not know particulars until my first finished game (RE5 in January 2012), but going through it sporadically and randomly now I realize it is better the way I described it. I liked not knowing the individual fates of the Beta Team from the time of the train incident to the mansion. You have the benefit of a different kind of hindsight: playing the games closer to their order of release rather than chronologically. This OP is asking about story, hence, story parametrically determines the order I suggested.

I put time and effort into my suggestions and I largely know what I'm doing when it comes to any lore. Probably the only thing I am halfway-decent at.
